You decide the approvals
For each workflow you decide what the system may do on its own and where it presents things to you, for example for payments above a limit or for contracts. Every action has a record that you can check.
Measure instead of hope
Every workflow gets a target by which it is measured, for example the response time to inquiries. That way you see whether the automation works.
